For the frosting

  • 340 grams of softened cream cheese
  • 175 grams of unsalted butter (room temperature)
  • 360 grams of powdered sugar
  • ½ teaspoon pure vanilla extract

Steps to follow

  • Preheat the microwave or oven to 350 degrees F. Take two long cake pans (approximately nine inches) and spray them with non-stick cooking spray. Place parchment paper at the bottom of the pans and set them on the side.
  • Mix cocoa powder, baking powder, cake flour, and salt in a large bowl. Set this bowl aside, ensuring there are no lumps in each powder. This way, your birthday cake will have an even texture once it is baked.
  • In another large mixing bowl, blend the butter and sugar using an electric mixer. Gradually add the eggs, vegetable oil, food colouring, vanilla extract, and vinegar and mix them well.
